We know Alain Miam Miam for its gargantuan sandwiches. But this figure from the Marché des Enfants Rouges is also famous for its pantagruelian pancakes. On his biligs, buttered to perfection, he turns buckwheat pancakes, wheat pancakes and more original preparations.

An example ? The vegetarian cone which is: a cone made of thin blini dough garnished with raw vegetables (carrots, salad, avocado, fresh mushrooms), fresh goat's cheese and gomasio, served cold. Invigorating but healthy, and ideal for a refreshing break that remains delicious.

On the menu slate, we also find the Socca de Nice-style chickpea crepe… and Alain Miam Miam style. Here – may the purists forgive it – no cooking in a wood oven; the pancake is seized on the bilig. We choose her pancake – for example: goat cheese, onion confit – and she makes a green salad in a buckwheat pancake bowl… which is edible! It's pretty and fun because you can bite into both the container and the contents.

This light recipe leaves enough room for the famous Gigi pancake: a thin layer of buckwheat, seared above and below, and sprinkled with warm rose petals. Pimped with a little whipped cream. "It is delicious" !
