What do pancakes and religion have in common? Candlemas, forty days after Christmas, celebrates the presentation of Jesus at the temple. It became a party. We know Alain Miam Miam for its gargantuan sandwiches. But this figure from the Marché des Enfants Rouges is also famous for its pantagruelian pancakes. On his biligs, buttered to perfection, he turns buckwheat pancakes, wheat pancakes and more original preparations.

An example ? The vegetarian cone which is: a cone made of thin blini dough garnished with raw vegetables (carrots, salad, avocado, fresh mushrooms), fresh goat's cheese and gomasio, served cold. Invigorating but healthy, and ideal for a refreshing break that remains delicious.

On the menu slate, we also find the Socca de Nice-style chickpea crepe… and Alain Miam Miam style. Here – may the purists forgive it – no cooking in a wood oven; the pancake is seized on the bilig. And butter instead of olive oil. The result is a rustic and comforting snack, in the spirit of its signature sandwiches.

Tired of pancakes? Want salad? Yes, but in a creperie, that would be a shame... However, the inventive Gigi has the solution. In this creperie with an established reputation, the owner innovates and suggests that her guests no longer hesitate between pancake and salad, but rather take a “salad-style” pancake.

We choose her pancake – for example: goat cheese, onion confit – and she makes a green salad in a buckwheat pancake bowl… which is edible! It's pretty and fun because you can bite into both the container and the contents.

This light recipe leaves enough room for the famous Gigi pancake: a thin layer of buckwheat, seared above and below, and sprinkled with warm rose petals. Pimped with a little whipped cream. "It is delicious" !

A pancake can also be shared. Breizh café offers “amuse-galette”, small folded and rolled pancakes served on a slate to enjoy with friends at aperitif time. With salmon, Auvergne blue cheese, andouille, chorizo ​​or ham, these appetizers lined up on slates allow you to taste different recipes. Everything can be accompanied by a hard cider.

It’s the 100% Breton aperitif. In the sweet version, they look like “makis”: the pancakes are filled with a chocolate mousse with a homemade salted butter caramel. And why not let yourself be tempted by the artisanal ice creams with matcha green tea, buttermilk, ginger or grapefruit sorbet. Original and nice.
