In the Marsh, Valrhona 47 Archives It's a hybrid space, both a boutique and a tasting room, where the general public can discover rare beans and blends. In their adjoining lab, the company, experts in chocolate transformation, offers workshops for pastry professionals.
To celebrate its 50th anniversary, Kaviari, the master of French caviar, and Valrhona, the master of chocolate, have decided to introduce us to an amazing recipe.
Their creation? A daring chocolate mousse that fuses the intensity of 100% pure Valrhona cocoa with the briny iodine of caviar. The texture is ethereal: the smooth, almost velvety mousse, with its deep notes of dried fruit and subtle spices, bursts in the mouth. The creaminess of the chocolate contrasts with the translucent, salty, and crunchy pearls of a decidedly premium caviar: Oscietra. Be warned, it's magic!

Lethe Workshop
THELethe Workshop is an artisanal glassworks that has been showcasing Syrian artistic excellence with a resolutely contemporary spirit for over twenty years. Installed as a pop-up in the Marais until December 30th, the company unveils a poetic collection of glasses, stemmed glasses, carafes, flared jugs, candlesticks and lighting fixtures.
Mouth-blown by Syrian master glassmakers, all pieces are made from recycled glass, in an environmentally conscious approach that remains true to an ancestral craft recognized as part of UNESCO's intangible cultural heritage. The absence of molds guarantees the uniqueness of each creation: slight irregularities, variations in shape and color become the very signature of the workshop.
A symbol of this aesthetic, the "Grape" lamp embodies the perfect union of light sculpture and fine craftsmanship. The hand-blown glass spheres, assembled like a luminous fruit, diffuse a soft, warm glow that enhances both a living room and a festive table. The glasses, candle holders, and decorative spheres, also mouth-blown and hand-shaped, reveal the movement of recycled glass, captured in the material like a trace of the hand.
